Alaska Sole Crudo

Try this crudo full of Italian flavors when you need something light, fresh and flavorful. It's also an excellent first course or light lunch option.

Ingredients

2 tablespoons lemon juice

2 teaspoons lemon zest

1/4 cup finely sliced onion

Pinch red pepper flakes

Kosher salt and freshly ground pepper

1/2 pound Alaska sole (flounder) fillets, thawed, patted very dry and cut into 1/2-inch strips crosswise

2 tablespoons extra virgin olive oil

1/4 cup chopped Castelvetrano olives

2 teaspoons capers

2 tablespoons slivered basil, plus additional for garnish

1 avocado, thinly sliced

Step 1

1. In a small bowl combine the lemon juice, lemon zest, onion, and pepper flakes. Season with salt and pepper and let stand 5 minutes.

Step 2

In another bowl combine the fish, oil, olives, capers and basil and season with salt and pepper. Toss with the lemon mixture. Divide avocado between serving plates and top with the fish and more basil.
