Air-Fryer Alaska Sole with Potato Chip Crust

What golden crispy sole without the frying? This dish cooks up in the air-fryer with a crunchy potato chip crust. Paired with a pickle mayo, it's a winner-winner fish dinner!

Ingredients

1/2 cup mayonnaise

1/4 cup finely chopped dill pickles

2 tablespoons finely chopped dill

Kosher salt and freshly ground pepper

2 large eggs

1/4 cup all-purpose flour

1 pound Alaska sole (flounder) fillets, thawed and patted dry

1-1/2 cups potato chip crumbs

3/4 cup panko breadcrumbs

Step 1

To make the pickle mayo, combine the mayonnaise, pickles, and dill in a small bowl and season with salt and pepper. Set aside.

Step 2

Preheat the air fryer to 400°F or conventional oven to 450° Beat the eggs in a pie plate with 1 tablespoon of water. Place the flour on a plate and season with salt and pepper. Put the potato chip crumbs and panko in another pie plate and combine.

Step 3

Dredge the fish on both sides in the flour, shaking off excess. Dip into the egg to coat, and then into the potato chip mixture, coating all over. Place in the air fryer and cook until browned and cooked through, about 8-10 minutes. If using a conventional oven, bake on a sheet pan until browned and cooked, about 10 to 12 minutes.  Serve with the pickle mayo.
